These fruity popsicles are a refreshing and healthy snack featuring cantaloupe!
Experiment with the flavors in this recipe … just keep the proportions similar.
If you don’t have popsicle molds, no worries! You can use small paper cups or muffin/baking tins.
✅TIP: Tightly cover your DIY popsicle mold with foil and insert your stick through it to help hold the stick upright while the mixture freezes. To unmold, simply run your mold under warm water for a few seconds.
🍓Berry Cantaloupe Popsicles 🍓
(makes about 16 popsicles, depending on size)
- 1 small cantaloupe, cut into chunks
- 1 large seedless cucumber, peeled and cut into chunks
- Juice from 3 large lemons
- 1 Tbsp honey
- 1 cup cold water (as needed)
- 1 small bag of frozen berries (blueberries, blackberries, or raspberries)
Place the melon, cucumber, lemon juice, and honey in a blender or food processor and blend until smooth. Add water as needed to reach your desired consistency.
Fill your molds with the mixture about ¾ full, to give the popsicles room to expand as they freeze. Add a few berries to each mold and insert the sticks. Freeze for at least 4 hours. Yum!
