My favorite kind of meal-prep meal: delicious, healthy, and just a few ingredients.
This one also happens to feature this week’s food of the week, paprika.
Try this with some sweet potato and broccoli, rice and asparagus, or a side salad.
Chicken with Smoked Paprika
(makes 8 servings)
- 2 lbs boneless skinless chicken breasts
- 2 Tbsp olive oil
- 2 tsp smoked paprika
- 1 tsp each garlic powder + dried thyme
- ½ teaspoon pink Himalayan salt
Preheat your oven to 375ºF. Line a baking pan with foil.
Pat the chicken dry, place it on the prepared pan and brush the chicken with olive oil.
In a small bowl mix together the remaining ingredients and sprinkle evenly over the chicken.
Bake for about 20-25 minutes, or until the chicken is cooked through – internal temp should be 165ºF.
Remove from the oven and serve. Easy and delicious. Enjoy!
